The names you’ll hear in this workshop are those of some of the more than 500 varieties of olive cultivated in Italy, and which characterize the landscape of the country.
Extra virgin olive oils are extracted pure, and express all the aromatic richness that olives have to offer. A selection of this wide diversity is shared in Slow Food Editore’s Guide to Extra Virgin Olive Oils 2022, along with legumes, fresh cheeses, fish and vegetables from Slow Food Presidia.
