From seed to harvest, with hard work over vast blue fields, mussel growers are the farmers of the sea.
Mussel farmers gather one of the sea’s most appreciated delicacies, known in Italy by a variety of names, from muscoli in the eastern Rivieria around La Spezia and cozze in the area around Taranto. At Terra Madre mussel farmers present their seafood and describe the art of their work, its contribution to mitigating climate change and give us a taste of some typical dishes, including the stuffed mussels of La Spezia and tubetti pasta with mussel-based sauce made with Taranto Black Mussels, a new Slow Food Presidium.
