Not all salmon is created equally, nor is all sushi. It’s not only a matter of flavor: it also has to do with our health. 

We’ll talk about this idea while listening to the experiences of a chef who in her own sushi restaurant encourages her customers to order wild salmon, which is not farmed, in order to raise more awareness of this product. Then, we’ll hear from the head of a group of fishers who is developing a project against GM salmon.

  • Caroline Bennet, UK, founder and owner of the restaurant Moshi Moshi, in London.
  • Johnny Fishmonger, USA, chef and captain of Coastal Rovers, a group of fishers, chefs, and scientists, and leader of local sustainable food movements.
  • Andrea Pezzana, director of the Complex Structure of Clinical Nutrition, Asl City of Turin and scientific referent for the food and health theme of Slow Food.
