While the culture of eating seaweed remains in many parts of the world as a traditional regional food culture, seaweed is now being reevaluated as a new food ingredient.
From high-end gastronomy by renowned chefs to healthy diet and environmentally-friendly food, seaweed is sought after by people all over the world. Seaweed Summit is a space for small-scale producers and activists from around the world who to bring seaweed from their own territory.
Through this summit, we will talk about the complexity and richness of what eating seaweed has meant to humankind and what common problems we face, and to exchange know-how and ideas on seaweed eating.
The meeting is scheduled to take place at Parco Dora, at the riverside, with the presence of seaweed harvesters from different countries and other interested parties.
