UNISG researchers discuss issues related to the relaunching of Ukrainian gastronomic heritage, which risks being erased by the war.
The book is the result of a foodscouting research, before the outbreak of the conflict, conducted by UNISG, in collaboration with the Ca ‘Foscari University of Venice and Slow Food Ukraine, as part of the European project ERC DiGe – Ethnobotany of divided generations in the context of centralization.
