The food system is one of the main drivers of climate change: loss of biodiversity, exploitation of limited resources, water and land grabbing, pollution of groundwater, poor eating habits, excessive use of plastic in packaging.

UNISG students share what they are learning in Pollenzo and how, according to them, a gastronome can deal with these challenges.
