Home fermentation not only regenerates our microbioata but also allows us to find a new relationship with the world around us, taking advantage of the biodiversity of our environment to enrich ourselves with biodiversity. Because food is not simply “fuel,” but our primary interaction with the world around us.

- Carlo Nesler, Italian expert on fermentation. He has translated the book Wild Fermentation by Sandor Katz into Italian for Slow Food Editore. His company produces traditional and innovative non-pasteurized fermented foods.
